The story of Bikaneri Bhujia goes back to 1877, during the reign of Maharaja Shri Dungar Singh of Bikaner. Historical records describe Bhujia as a special preparation made during the royal era, traditionally known as Dungar Shahi Bhujia.
What began as a distinctive local delicacy gradually became a part of everyday life in Bikaner. The arid climate of the region, locally grown moth beans and traditional preparation methods helped give Bikaneri Bhujia its characteristic flavour and crisp texture. Over the years, Bhujia travelled from the streets and homes of Bikaner to different parts of India and eventually to the world.
Today, Bikaneri Bhujia is a registered Geographical Indication (GI) product, reflecting its strong connection with the region and its traditional identity.
